Zucchini Slice

Grated zucchini and carrots, combined with canned corn, and flavored with bacon, cheese, onion and garlic. Egg and self-rising flour help to bind it all together. The mixture is baked in a pie plate and sliced to serve.
Ingredients
- 2 medium zucchini
- 2 medium carrots, grated
- 1 onion, chopped
- 1 15-ounce can whole kernel corn, drained
- 3 slices bacon, diced
- 1/2 cup grated cheese
- 1/4 cup chopped parsley
- 1 clove garlic, crushed
- 1/2 cup olive oil
- 4 eggs, beaten
- Self-rising flour

Method
Grate the zucchini onto a tea towel; squeeze out liquid. Put all vegetables, the bacon, cheese, parsley and garlic into a large bowl. Add the oil and eggs; mix well. Stir in enough flour to make a moderately stiff but still moist mixture. Bake in a greased 9-inch pie plate in a 350 degree oven for 30-40 minutes, until golden brown.
Notes: By squeezing the juice from the grated zucchini, the baked Zucchini Slice doesn't become mushy.
