Pork ribs are baked with a sauce of onion, dark beer, espresso and chocolate until tender, and then glazed with prepared barbecue sauce.
Preheat oven to 375 degrees. Brown rib meat on both sides in a lightly oiled skillet on medium heat, about 5 minutes. Place ribs in a 3 quart casserole dish and scatter onions on top. Pour beer over meat and onions and seal with a tight lid or tin foil.
Bake for 1.5 to 2 hours. While ribs are cooking, lightly oil a small saucepan and saute garlic for two minutes over medium heat. Add barbecue sauce, espresso powder and allow to dissolve into sauce. Add chocolate, chili powder, ginger and cumin. Simmer on low for at least 15 minutes. Remove from heat and set aside. Remove ribs from oven and drain off beer and onions. Add prepared sauce to ribs and cover thoroughly. Bake uncovered for an additional hour.

Garnish with fresh cilantro if desired.
