Pork chops, dipped in egg and coated generously with seasoned flour, are simmered in beef broth with onion and potatoes for this one-dish meal.
 

Ingredients

  • 8 pork chops (bone-in)
  • 1 to 2 cups flour (as needed)
  • Desired amounts of garlic powder, onion powder, sage and thyme
  • Pepper to taste
  • 1 large Ziploc bag
  • 1 egg, beaten
  • Butter to brown
  • 1 large white onion sliced into rings
  • 4 cups of reduced-sodium beef broth
  • 8-10 medium potatoes, peeled and sliced into 1/4-in thick rounds
  • Sour cream

Method

Put flour & seasonings in large Ziploc bag until mixed. Dip (don't drown) the chops in egg. Coat with flour in ziploc again. Heat butter on med-high heat in a large Dutch oven. Brown chops until golden on each side. Line pan bottom with browned chops, cover with onion rings, and pour enough broth to reach top of onions. Cover and cook for 15 mins. Put potato slices in an even layer over the onions; cover with remaining broth (if the liquid level doesn't cover the spuds add water until it does). Cover again. Turn down temp to simmer for 45-55 mins. Check periodically and cover potatoes as needed with water. Serve with a dollop of sour cream and crushed pepper.
