Sweet and Spicy BLT Sandwiches

Spice up the traditional BLT with red pepper flakes and a dash of hot chili sauce.
 

Ingredients

  • 12 slices thick cut bacon
  • 1/2 cup light brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon crushed red pepper flakes
  • 1/2 cup mayonnaise
  • 1 teaspoon honey
  • 1 teaspoon sriracha or hot chili sauce
  • 8 slices sourdough bread
  • 8 Romaine lettuce leaves
  • 2 large ripe tomatoes
 
Method

Preheat oven to 350 degrees. Prepare 2 rimmed baking sheets by completely covering them with aluminum foil. Mix brown sugar, black pepper and red pepper flakes on a plate. Dredge bacon in mixture, pressing sugar into bacon with fingers. Arrange bacon on baking sheets so no slices overlap. Cook 10 minutes then switch position of pans, rotating front to back. Continue cooking 10-15 minutes until crispy. Remove to a clean plate and blot with paper towels. Do not drain on paper towels as bacon will stick. Mix mayonnaise, honey and sriracha in a small bowl. Toast bread and spread both sides with mayonnaise. Place 2 lettuce leaves on each of 4 slices of toast, add tomatoes, 3 slices bacon, and another slice of toast.

 

Notes: A twist on my favorite sandwich, The sweet and spicy notes add some zest to this classic.
