Sugar and Spice Pork Loin

A glaze prepared with brown sugar, cinnamon, cloves and chili powder sweetens and spices this pork loin.Ingredients
- 1 1/2 cup light brown sugar
- 1 tbsp ground cinnamon
- 1 tbsp ground cloves
- 1 tsp chili powder
- 2 lb pork loin
- Glaze:
- 3 tbsp butter
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp chili powder

Preheat oven to 350 degrees. Mix all spices and sugar in a large resealable bag. Wash pork loin and pat dry. Place pork loin in bag and knead well. Make sure loin is cover with mixture. Remove from bag and place in lightly oiled pan then lightly sear all sides of meat. Place in a lightly oiled baking dish and bake 40-50 minutes or until a meat thermometer reads 160 degrees. Remove from oven and let set for 5 minutes. Slice into 2 inch slices. Reserve 1/4 cup of pan drippings. Glaze: Melt butter in a small saucepan. Add brown sugar, cinnamon, cloves and chili powder to reserved drippings. Bring to a slow boil and remove from heat. Serve drizzled over pork slices or on the side as a dipping sauce.
