Spinach Stuffed Pork Chops

Spinach sauteed with bacon and garlic is mixed with cheese and stuffed into these lucky pork chops. What a splendid choice for dinner.
 

Ingredients

  • 4-6 pork chops
  • 3 cups spinach
  • 1/2 cup Italian style cheese blend
  • 1/3 cup bacon, cooked and chopped
  • 1/3 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Shake and Bake for pork
  • 2 tbsp olive oil

Method

Preheat oven to 425 degrees. Slice a pocket in pork chops. Heat olive oil in a large skillet on medium high heat. Add garlic and saute about 1 minute, until garlic is just beginning to brown. Add bacon and spinach and cook until spinach is wilted. Remove from heat and place into a bowl. Add cheese blend and toss. Refrigerate for 5 minutes. Fill chops with mixture. Place Shake and Bake into a bowl then coat both sides of chops. Place on a baking sheet. Bake at 425 degrees for 30-40 minutes.
