Spicy Stuffed Peppers


Try these peppers stuffed full of sausage, rice, and beef.



Ingredients:

  • 6 - 8 Anaheim or Caribe peppers
  • 1/2 lb ground beef
  • 1/2 lb hot or sweet Italian sausage
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 can tomato sauce
  • 1 cup salsa
  • 2 tbsp sugar
  • 1 cup cooked white rice

Method

Cut the tops off the peppers and remove seeds without damaging pepper as much as possible, rinse completely. Combine beef, sausage, rice, onions and garlic with salt and pepper. Gently press into peppers. If the sides split then place the split side down in casserole dish. If there is any of the meat mixture left over then just stuff it around the peppers in the pan. Combine the tomato sauce, salsa and sugar and pour over the top of the peppers. Bake in a 325 degree oven for 1 hour.

Notes: Depending on how spicy you like your peppers, you can use hotter sausage, peppers and salsa. These are great all by themselves or served with fresh cornbread. They freeze well after being cooked.
