Black sesame seeds and red pepper flakes give this Asian style pork dish its great name and flavor.

Ingredients

  • 3/4 medium soy sauce
  • 1/3 cup sake
  • 3 tbsp kochee jang (korean hot pepper paste)
  • 2 tbsp sesame oil
  • 2 tbsp black sesame seeds
  • 1 tbsp ground red pepper flakes
  • 1/2 cup sugar
  • 2 tbsp green onions (minced)
  • 1 tbsp garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 2 lb pork loin
  • 6 green onions (garnish)

Method

Toast sesame seeds in a frying pan. Remove and crush lightly with the back of a knife. Mince garlic, ginger and 2 tablespoons of green onion. Combine the first 10 ingredients in a large bowl. Slice the entire pork loin into thin strips against the grain of the meat. Add it to the first 10 ingredients and let marinate for 2-3 hours. Heat a grill to medium high. Cook the pork slices for about 3-5 minutes a side or until lightly charred. Slice remaining green onions thinly on a bias and use them as garnish on top of the pork.
