Spicy Bacon Country Ribs With Sweet Cherries

Pork ribs are fork tender after a long bake with a mild ancho chili spice rub and a sweet and zest cherry flavored sauce.
 

Ingredients

  • 2 1.25 oz chili seasoning mix
  • 1 1/2 tablespoons ancho chili powder
  • 8 lean country ribs
  • 8 thick cut slices apple wood bacon
  • Sauce:
  • 1 1/2 cups chicken stock
  • 1 1/2 cups bottled cherry juice
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar
  • 1 teaspoon grated orange zest
  • 1 pound frozen cherries, thawed
  • Garnish:
  • 1 tablespoon fresh cilantro, chopped

Method

Preheat oven to 350 degrees. Mix together chili seasoning mix and ancho chile powder then rub on both sides of meat. Wrap a piece of bacon around each piece of meat, evenly from top to bottom, and secure with a toothpick. Lay ribs, pick side down, in a 2 quart baking dish then cover with foil and bake 40 minutes. While meat is cooking, prepare glaze by adding chicken stock, cherry juice, cornstarch, brown sugar, orange zest and half of cherries to a blender. Puree mixture until smooth, then add to a medium saucepan, and bring to a simmer over medium heat. Cook and stir occasionally until mixture is thickened, about 10 minutes. While sauce is cooking, chop remaining cherries. Remove sauce from heat, stir in chopped cherries and set aside, keeping warm. After ribs have cooked for 40 minutes, remove from oven and drain any fat and or liquid. Spoon half of sauce over meat and return to oven without foil. Continue to cook another 30 minutes or until bacon is brown and ribs are fork tender. Remove from oven and spoon remaining sauce over meat. To serve, place ribs onto a serving platter and garnish with cilantro.
