Smothered Pork Chops


These pork chops are coated with bread crumbs and cooked in the slow cooker with cola, mustard, and garlic. Serve with mashed potatoes.



Ingredients:

  • 5 tablespoons olive oil  
  • 6 center-cut pork chops
  • 1/4 cup freshly shredded Parmesan cheese
  • 3/4 cup Italian bread crumbs
  • 2 tablespoons Worcestershire sauce
  • 1 (12 ounces) can cola
  • 1 tablespoon minced garlic
  • 1 teaspoon cranberry honey mustard
  • 3/4 teaspoon black and red pepper blend
  • 2 tablespoons cornstarch
  • 1-1/2 cups water

Method

In large skillet over medium-high heat, heat olive oil. Moisten pork chops with water. Combine Parmesan cheese and Italian bread crumbs. Dip wet pork chops in mixture and place in hot skillet. Lightly brown pork chops on both sides. Pork chops will probably need to be cooked in two batches. Set pork chops aside. In a slow cooker set on High, place Worcestershire sauce, cola, garlic, cranberry honey mustard. Add pork chops. In same skillet used to cook pork chops, scrape drippings. In small bowl, combine cornstarch, water, and pepper blend. Mix well and add to skillet. Cook and stir for about 2 minutes. Add gravy mix to slow cooker stirring well. Cook for 2-1/2 hours..

Notes: This is one of my family?s favorite dishes. I usually serve pork chops with mashed potatoes or rice.
