Smoked Sausage and Scrambled Eggs


Sliced sausage links and mushrooms are cooked, then eggs (beaten with a little soy sauce) are poured atop and scrambled. Cheese tops it all.



Ingredients:

  • 1 Tablespoon canola oil
  • 2 cooked smoked sausage links, sliced thin
  • 1/2 pound sliced mushrooms
  • 8 eggs, beaten
  • 2 teaspoons soy sauce
  • 4 slices of (white) American cheese (optional)

Method

In nonstick pan over medium heat, cook sausage and mushrooms in oil. Add soy sauce to eggs, and give it a few whisks to mix well. Pour eggs over sausage and mushrooms in pan. Stir until eggs are cooked, perhaps 5 minutes. Remove from heat; top with cheese slices. Cover. Cheese will melt while you make toast.

Notes: I like this recipe very much. When I had my six granddaughters here it was a fast way to feed that many kids quickly.
