Smoked Almond and Mushroom Stuffed Pork Chops

Ricotta cheese, smoked almonds, green onion, mushrooms and the perfect seasonings create the stuffing for these hearty pork chops.Ingredients
- 3 thick cut boneless pork chops
- 1 green onion, chopped
- 1 cup mushrooms, chopped
- 1/2 cup ricotta cheese
- 1/3 cup bread crumbs
- 1 egg, beaten
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 8 smoked almonds, finely chopped
- 1 tsp dried parsley
- 1/4 tsp salt
- 1/2 tsp pepper
- 2 tsp minced garlic
- Pinch sweet basil
- Olive oil
- 1 tbsp butter

Method
Preheat oven to 400 degrees. Drizzle olive oil in a frying pan and add butter. Saute green onions and mushrooms just until mushrooms are cooked. Place onions and mushrooms in a small bowl, add remaining ingredients, and mix thoroughly. Cut a pocket in each pork chop and stuff with mixture leaving enough room so pocket can still be closed. Place pork chops on a greased wire rack then place rack on a baking sheet. Bake about 50 minutes.
