Slow-Cooked Pork Ribs


Country-style pork ribs are cooked in the crock pot with canned tomatoes, celery, white beans, peas & mushrooms, seasoned with garlic & cumin.



Ingredients:

  • 8 country-style pork ribs
  • 1 can crushed tomatoes (14 oz)
  • 4 ribs celery, chopped
  • 1 can white kidney beans, drained
  • 1 cup frozen peas
  • 8 oz white mushrooms, sliced
  • 1 small white onion, chopped
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 bay leaf
  • 1/2 tsp cumin
  • Salt and pepper

Method

Chop onion and saute in olive oil until transluscent (but not brown). Put cooked onion in the crockpot. Salt and pepper the ribs and place them on the onions in the crock pot. Add the crushed tomatoes, sliced mushrooms, chopped celery, peas, and beans. Add garlic powder, cumin, and bay leaf. Stir gently. Cover and cook on low for 7-8 hours or high for 3 1/2 to 4 hours.
