Acorn squash halves are baked and filled with a mixture of cooked pork sausage and onion, seasoned with sage and maple syrup.
Place squash, cut side down, in a shallow baking dish or pan. Add 1/2 cup water and bake 30-40 minutes in a 350 degree oven or until tender. Meanwhile brown sausage in a saute pan, add chopped onion and cook until tender.
When squash is tender, remove from oven. Add the maple syrup to the sausage mixture and spoon into the squash halves. Serve.
Notes:
This is a very versatile dish. Cranberries can be added with the onion.
