Sausage Pie

This main dish is made with savory sausage, potatoes and corn baked in a piecrust.
 

Ingredients

  • 1 pack of smoked sausage or keibasi
  • 1 onion, chopped
  • 1 tbs parsley
  • 5 potatoes, peeled and sliced thin
  • 1 can of yellow corn, drained
  • 5 hardboiled eggs, peeled
  • 2 packs of ready made piecrust, (the unroll and use type)
 
Method

Place sausage, onion and parsley, salt and pepper to taste, in a pot filled with water until sausage is covered. Boil until sausage is fully cooked. While sausage is cooking, line bottom of a large square cake pan with 2 of the pie crust circles, forming them to fit. Save the other 2 crusts for the top. Slice sausage in thin slices; save the broth from the sausage. Layer, sausage, then potato, corn, and sliced hard boiled eggs, continue layering until the pan is full just to the top. Pour broth from sausage into the pan until it is almost to the top. Cover with remaining two crusts. Form to fit. Bake at 375 degrees for 1 hour, or until crust is brown and potatoes are soft.
