Sausage and Potato Stuffed Bell Peppers

These stuffed peppers make a great breakfast, lunch, or dinner. The sausage and potatoes are hearty and flavorful.

2 Tbsp Canola Oil, divided
4 Large Green Bell Peppers
1 Tbsp Butter
1× 20 oz bag Refrigerated Diced Potatoes With Onions
1× 9.6 oz pkg Fully Cooked Hearty Sausage Crumbs
1× 14.5 oz can No Salt Added Diced Tomatoes, drained
½ tsp Garlic Salt
½ tsp Hot Sauce
1 cup Shredded Sharp Cheddar Cheese


Preheat oven to 350 degrees. Drizzle a large rimmed baking sheet with 1 tbsp oil. Cut peppers in half lengthwise. Remove and discard seeds and membranes. Place peppers, cut sides up, on prepared baking sheet. Bake for 10 minutes or just until tender crisp. Remove from oven. In a large nonstick skillet, heat remaining oil and butter over medium high heat. Add potatoes and cook, stirring occasionally, for 5 minutes or until potatoes begin to brown. Add sausage and cook for 1 minute. Stir in tomatoes, garlic salt and hot sauce. Spoon mixture evenly into bell pepper halves, mounding slightly. Bake for 15-18 minutes or until tender. Sprinkle shredded cheese over bell peppers. Bake for 5 minutes or until cheese melts.
