Saucy Foil-Packed Barbecue Ribs

Pork baby back ribs, barbecue sauce, orange marmalade and hot pepper sauce are grilled in foil packets.

Ingredients:

  • 3/4 C Barbecue sauce
  • 2 Tbsp orange marmalade
  • 2 tsp bottled hot pepper sauce
  • 4 lb pork baby back ribs

Method

Preheat barbecue to medium-high heat. Mix together barbecue sauce, orange marmalade and hot pepper sauce until well blended. Cut ribs into 2-rib sections. Place half of ribs in a single layer in the center of large sheet of heavy-duty foil. Bring up long sides of foil. Double-fold the short ends to seal, leaving top open. Place 3 or 4 ice cubes in packet through opening. Double fold the top to seal, leaving space for steam. Repeat with another sheet of foil and remaining ribs to make a second packet. Grill covered, for 45 minutes to 1 hour or until ribs are cooked through. Remove ribs from foil and return to grill; brush with the barbecue sauce mixture. Grill an additional 10 to 15 minutes, turning occasionally and brushing with remaining barbecue sauce mixture.
