Roast Pork Loin and Kraut

Just a few ingredients is all it takes to put together this pork dish. Surround the pork roast with sauerkraut and potatoes for a German-style dinner.
 

Ingredients

  • 1 Pork Loin Roast (3-4 lb)
  • 1 large bag of sauerkraut
  • 12-15 small red potatoes(halved)
  • Salt and pepper to taste

Method

Place the pork loin in a roasting pan with a rack and surround it with sauerkraut. Place the potatoes on top of kraut and sprinkle everything with salt and pepper. Cover roaster pan with a lid or foil. Roast at 350 degrees for 40 to 50 minutes or until a meat thermometer inserted in meat registers 155 degrees F. Let stand 10 minutes before serving (the meat's temperature will rise 5 degrees F. during standing time.)
