Red Rice with Pork Chops


This dish can be the whole meal or a great addition to any meal.



Ingredients:

  • 6 strips lean bacon
  • 1/2 cup chopped onion
  • 4 green onions, minced with green tops
  • 1 can diced tomatoes
  • 1 cup long grain rice, uncooked
  • 1 cup cooked and minced pork chops
  • Salt to taste
  • Pepper to taste
  • Hot pepper sauce to taste

Method

Heat a heavy skillet, add bacon and cook until crisp. Remove and drain on paper towels. Cook onion and green onions in remaining bacon fat until tender. Crumble bacon and return to skillet. Add tomatoes, rice, pork chops, salt, pepper and hot sauce. Reduce heat to low and cook for 10 minutes. Transfer mixture to a buttered 1 1/2 quart casserole. Taste and adjust seasonings. Cover and bake at 350 degrees for 1 hour, stirring every 10 to 15 minutes.
