Red Curry Pork

This Asian inspired dish is tasty and simple to prepare. The red curry is blended with coconut milk for a great flavor and the pork is very tender.
Ingredients
- 1 tbsp red curry paste
- 1 14.5 oz can coconut milk
- 2 cloves garlic, minced
- 2 tbsp brown sugar
- 1 tbsp fish sauce
- 1 stalk lemongrass or 2 tbsp lemongrass paste
- 2 tbsp cilantro, chopped
- 1 serrano chili pepper, stemmed, seeded and micro diced
- 1 mango, small dice, reserve 2 tbsp for garnish
- 2 green onion, cut on bias, reserve 2 tbsp for garnish
- 2 lb lean pork, sliced in strips
- 1 lb lo mein or other Asian noodles
- 2 qts water

Method
In a large saute pan on medium heat, saute red curry paste to release flavors, about 1 minute. Add coconut milk and whisk to incorporate. Add garlic, brown sugar, fish sauce, lemongrass, peppers, cilantro, mango and green onion. Stir to blend flavors and bring to a boil. Once boiled, reduce to a simmer and add pork. Pork may be cooked ahead of time and added as needed. In a large sauce pot, bring water to a boil, salt to taste, then add noodles and cook until tender. Place noodles in a bowl and top with pork mixture. Garnish with reserved mango and green onion.
