Quick and Easy Sausage Bake

A holiday brunch is not complete without this quick and easy bake recipe. Sausage and cheese are combined with green pepper, red pepper, and yellow pepper to create a meal any family will ask for again and again. Italian seasoning and frozen hash browns add to the flavor and aromas that will be produced while this dish is baking.
Ingredients
- 1 pound uncooked sausage
- 1 package frozen diced potatoes, thawed
- 1 small green pepper, diced
- 1 small yellow pepper, diced
- 1 small red pepper, diced
- 1 12-oz. package shredded Co-Jack cheese
- Dried Italian seasoning, basil, sage, or parsley, crushed (optional)
- Salt and pepper

Cook sausage; drain off fat. Put cooked sausage in a large baking dish. Add thawed potatoes, peppers, cheese, and seasoning, if desired; mix to commbine. Season to taste with salt and pepper. Bake, covered, in a 350 degree oven for 30 minutes.
Notes: I made this recipe because I needed something at the last minute for a covered dish gathering. I had no idea if it would work, since I just used what I had on hand at the moment. I was very surprised when everyone asked for the recipe!! I had to think what all I had put in it. Now you can try to add things you prefer to get the kind of taste you want!!
