Quick and Easy Breakfast Casserole
Serve this quick and easy casserole for brunch or dinner. Just layer bread with sausage, cheese, and the egg/milk mixture and bake.
Ingredients
- 4 slices bread
- 1 lb. bulk sausage
- 1 cup grated cheddar
- 6 eggs
- 2 cups milk
- 1 tsp. dry mustard (optional)

Tear up 4 slices of bread and place in a greased baking dish (9x13). Brown and drain 1 lb. bulk sausage meat and drain off fat. Spoon sausage over bread. Sprinkle with 1 cup grated cheddar cheese. Beat together 6 eggs, 2 cups milk, optional dry mustard and salt and pepper. Pour over mixture in baking dish. Bake in a preheated 350F oven for 35 to 40 minutes. The cheese will rise to the top.
Notes: This is great to make the night before. Also you can add sliced tomato with a dash of oregano for a dinner entree.
