Prune and Maple Sauced Pork Chops

The sweet, savory sauce is the perfect compliment to grilled pork chops--both easy and elegant.
 

Ingredients

  • 10-15 pitted prunes
  • 1/2 cup Riesling (or other sweet white wine)
  • 1/4 cup water
  • 3 tbsp apple cider vinegar
  • 1 tsp blackstrap molasses
  • 1/2 cup maple syrup
  • 4 boneless pork chops, with most fat trimmed
  • Salt or hickory salt, if available
  • Pepper
  • 1/2 cup chopped walnuts

Method

Place prunes, wine, water, and apple cider vinegar in blender. Puree and pour into sauce pan. Bring to simmer, stirring occasionally. While sauce is cooking, salt and pepper chops to taste. Grill at 350 degrees until done. While chops are cooking, add molasses and maple syrup to sauce, and keep on a low simmer while chops cook, continuing to stir occasionally. Top cooked chops with sauce, and sprinkle with chopped walnuts.

 

Notes: This is a great recipe for entertaining. The sauce is flavorful, but still lets the flavor of the chops through. It's interesting enough to please the "foodies", but has a mild enough flavor and heartiness to please the "meat & potato" eaters in the crowd. Best of all, it's fast and easy!
