A tasty way to introduce guests to a fusion of Spanish and Hungarian flavors.



Ingredients:

  • 4 loin pork chops
  • Sofrito:
  • 1/2 red onion, finely chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 6 cloves garlic, minced
  • 1 Hungarian wax pepper
  • 2 bay leaves
  • Roux:
  • 4 tbsp flour
  • 4 tbsp olive oil
  • Other:
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1/2 cup tomato juice
  • 2 tbsp red wine
  • 1 tsp paprika
  • 1 tsp sugar
  • 2 tsp lemon juice
  • 1/4 tsp cayenne pepper
  • 1/2 tsp Italian herbal seasoning
  • Salt and pepper to taste
  • 12 oz pack wide egg noodles, cooked al dente

Method

Season chops with salt and pepper. Heat olive oil in a 4 quart pan on medium and brown chops 4 minutes on both sides. Remove to plate and pour off excess oil. Using medium heat, cook oil and flour for roux to dark brown stage. Using medium heat, add sofrito ingredients and saute until mushy. Season with salt and pepper. Add everything except chops and noodles, mix, and re-season. Add chops, and cover with sauce. Cover pan and bake in oven at 325 degrees for 60 minutes. Serve chops with sauce and noodles.
