This Hungarian and Spanish inspired dish is perfect for guests and makes a great presentation. What a great way to introduce some new flavors.
Season chops with salt and pepper. Heat some olive oil in a 4 quart pan on medium, and brown chops 4 minutes on both sides. Remove to plate and pour off excess oil. Using medium heat, cook oil and flour for the roux to dark brown stage. Using medium heat, add sofrito ingredients and saute until mushy. Season with salt and pepper. Add everything except chops and noodles, mix, and reseason. Add chops, cover chops with sauce, cover pan, and bake in oven at 325 degrees for 60 minutes. Serve chops with sauce and noodles.
