Cubes of pork are cooked with tomatoes, tomato sauce, black beans, & seasonings, either on top of the range on in the crock pot, as you prefer.
Saute pork cubes in oil until browned. Deglaze pan with vinegar or wine, stirring to bring up bits of browned meat. Add all other ingredients, stir to combine completely and simmer until meat is tender, 35-45 minutes. If you prefer, transfer pork to crock-pot after deglazing. Add all other ingredients and cook on low for 8 hours. Serve with optional garnishes.
Notes:
I especially like to get this started in the morning and transfer to the crock pot. When guest arrive, we can watch the game, nibble on snacks, and bring this out with minimal fuss. To round out the menu, serve this with crusty bread and a simple tossed salad.
