A large pork shoulder is coated with molasses, sugars, and seasonings, wrapped in foil and slow-roasted in a covered grill for several hours.
 

Ingredients

  • 1 medium sized fresh pork shoulder, 8-10 lbs.
  • 1/4 cup molasses
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • Desired amounts of salt, pepper, cajun seasoning, garlic powder and chopped cilantro.
  • 1 bottle of your favorite BBQ sauce.
  • American cheese
  • Rolls

Method

Rub the shoulder with the molasses. Mix sugars and seasonings; cover the shoulder with sugar mix and rub in, making sure it sticks. Wrap the shoulder in foil and place in the back of a preheated grill. Make sure it is not directly over a burner and that the grill temp is around 250-275. Close the cover and let the shoulder cook in the grill for about 1 hr. Flip and rotate the shoulder and close the grill for another hour. Check again and this time just flip the shoulder. After the third hour, it should be cooked. Remove the foil and move it over the flame. Start basting with BBQ sauce. Flip and rotate as needed. It should be seared on the outside and juicy on the inside. Let sit for 20 minutes before slicing or pulling apart. Put it in a roll with your favorite cheese and top with BBQ sauce for serving.

 

Notes: If want the pork to fall apart, cook it in the foil for a total of 4 hrs. Just make sure you keep rotating and flipping, so it gets cooked evenly.
