Pork Loin in Gravy

Easy to make, full of flavor--your family will love it when you make this roast.
 

Ingredients

  • 2 to 3 lb pork loin
  • 1 juliened parsnip
  • 1 juliened carrot
  • 1 diced med apple
  • 2 leeks, sliced
  • 1 medium onion, sliced
  • Red or orange pepper, sliced
  • Flour
  • Black pepper
  • Garlic powder
  • Onion powder
  • 3 Tbsp canola oil

Method

Coat pork loin in mixture of flour, pepper, garlic and onion powder. Sear meat in a dutch oven in the canola oil. Remove meat to a plate to rest, add vegetables to the dutch oven and cook until tender. Return meat to the pot and add water to cover the meat, put a lid on the pot and bring to a boil. Place pot in oven until meat is cooked through about 1 1/2 hours on 350 degrees F. When cooked, remove meat and allow to rest before carving. Place pot on top of stove and add flour, or cornstarch, to thicken gravy. Add salt and pepper to taste.

 

Notes: When I cook this pork there is never any leftovers and the kids want to eat the gravy as a soup.
