Pork Chops with Apple and Sweet Potato Ragu

Baked pork chops served with a savory mix of onions, apples, and sweet potatoes make a hearty and healthy meal.
 

Ingredients

  • 4 center cut pork chops 1/2-3/4 inch thick
  • Salt and black pepper to taste
  • 1 large onion, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1/4 cup brown sugar
  • 1 large orange, juiced
  • 1/4 cup balsamic vinegar
  • 1 14 ounce can whole tomatoes
  • 2 Granny Smith apples
  • 1 red delicious apple
  • 1 medium sweet potato
 
Method

Season chops with salt and pepper and place on a baking sheet. Cover with foil and bake at 350 degrees for 30 minutes. Remove foil and bake another 15 minutes. While chops are baking prepare ragu. Saute onion in olive oil until caramelized. Add garlic and saute an additional minute. Add brown sugar, orange zest and orange juice with balsamic vinegar. Cook until almost all liquid has evaporated. Roughly cut tomatoes into large pieces and add with liquid from can. Peel apples and sweet potatoes. Cut each into rough 1 inch cubes and add to other cooked ingredients then bring to a boil. Simmer until both apples and sweet potatoes are tender, falling apart, and most liquid has evaporated, 20-25 minutes. If mixture becomes too dry, a small amount of water can be added. Serve hot over chops.
