Pork Chops Over Rice

Boneless pork chops cook in the skillet along with a mixture of long grain rice and frozen peas, seasoned with onion and thyme.
 

Ingredients

  • 8 boneless pork chops (3/4" thick)
  • 1 Tbsp. vegetable oil
  • 1 cup uncooked long grain rice
  • 1 can (14-1/2 oz.) chicken broth
  • 1/2 cup water
  • 1 small onion, chopped
  • 1 package (10 oz.) frozen peas
  • 1/2 tsp. salt
  • 1/2 tsp. dried thyme, crushed

Method

In a large skillet over medium heat, brown pork chops in oil; remove. Drain. Add the remaining ingredients to skillet. Place pork chops over the rice mixture. Bring to a boil. Reduce heat; cover and simmer about 20 minutes or until rice is tender.
