Pork Bottle Rockets

Thin slices of pork, marinated in a sweet an savory sauce then grilled on skewers. Serve skewers in a coke bottle with sweet and sour sauce.
Ingredients
- 3 lbs fresh pork, cut into 1/4 inch thickness and 3 inches in length
- 3 tbsp canola oil
- 6 tbsp rice vinegar
- 6 tbsp hot chili sauce
- 5 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp fresh ginger, grated
- 1 bottle Japanese sweet and sour sauce for dipping
- 32 sugar cane skewers or wooden skewers soaked in water at least 30 minutes

Slice pork and set aside. In a large bowl, whisk together oil, vinegar, chili sauce, garlic, soy sauce and ginger. Add pork and coat completely. Cover and marinate at least two hours. Fifteen minutes before cooking, preheat grill, or frying pan, to 350 degrees. Take marinated pork and place 3-4 slices on each skewer like an accordion. Use 3-4 strips on each one, allowing a small space between meat slices so it will cook well. Place on grill, or in a preheated pan, for 4 minutes on each side, or to taste. If using a frying pan, cover with a lid, or using a grill, close lid. If using cane skewers, the middle will have a sweet taste. If using wooden ones, it will have the same taste all the way through. Assembly: Using a clean, empty glass Coca-Cola bottle, pour sweet and sour sauce in halfway full. Place 2 pork bottle rockets into each bottle and serve with whatever you like. We like jasmine pork fried rice, but below is another option.
Notes: A really attractive way to serve this dish is to place in the middle of the plate and surround the bottle with one scoop each of, potato salad, slaw and baked beans. The sauce in the bottle is awesome on the salads and beans too.
