Pork and Cabbage Salad

This main dish salad combines cubes of a flavorful broiled pork tenderloin with shredded cabbage and avocado. It's drizzled with a dressing of soy sauce, lime juice, garlic and ginger, and topped with peanuts and green onion.
 

Ingredients

  • 1 lb. pork tenderloin
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce (reduced-sodium, if desired)
  • 1 tsp minced fresh ginger
  • 1 small bag shredded cabbage or slaw mix
  • 1 avocado, cubed
  • 1/4 cup olive oil or other heart-healthy oil
  • 1 lime, juiced (about 2 Tbsp.)
  • Honey-roasted peanuts
  • 2 green onions, sliced

Method

Split the pork tenderloin lengthwise to butterfly; do not slice all the way through. Place on broiler rack. Mix one minced garlic clove, half of the minced ginger, and 1 tablespoon of the soy sauce. Cover the pork on both sides with this mix; broil about 8-10 minutes on each side, until done. Cool and cube the pork. In salad bowl, layer the cabbage mix, pork, and avocado. In a shaker jar, mix the remaining soy sauce, ginger and garlic with the oil and lime juice. Shake well to mix dressing. Pour dressing over salad. Toss gently. Top with honey roasted peanuts and diced green onion.
