Pork and Brown Rice Soup with Curry

Use some leftover country-style pork ribs for the meat in this interesting soup.
 

Ingredients

  • 2 cups chopped cooked pork
  • 2 stalks celery, chopped
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped carrots
  • 1 clove garlic, minced
  • 1/2 tsp. parsley flakes
  • 3 chicken bouillon cubes
  • Dash onion powder
  • Salt and black pepper
  • 1 cup cooked brown rice
  • Curry powder

Method

In a 3-quart saucepan combine chopped cooked pork, celery, onion, carrots, garlic, parsley flakes, bouillon cubes, onion powder, and salt and pepper to taste. Add enough water to cover. Bring to boiling; reduce heat and simmer for 1 to 2 hours. Add cooked brown rice; simmer 30 minutes more. To serve, ladle into soup bowls and sprinkle with curry powder.
