Pork and Black Bean Chili

Cubes of pork are cooked with tomatoes, tomato sauce, black beans, & seasonings, either on top of the range on in the crock pot, as you prefer.
Ingredients
- 2 1/2 pounds pork sirloin, trimmed and cubed
- Olive oil
- 1/4 cup red wine vinegar or dry red wine or a combination
- 2 14.5 ounces cans diced tomatoes
- 1 15 ounces can tomato sauce
- 2 15 ounces cans black beans, rinsed and drained
- 1 teaspoon sugar
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 2 teaspoons ground cumin
- 1 tablespoon chili powder
- 1 teaspoon oregano
- Optional garnishes: chopped onions and peppers, sour cream, shredded cheddar or Colby Jack cheese

Method
Saute pork cubes in oil until browned. Deglaze pan with vinegar or wine, stirring to bring up bits of browned meat. Add all other ingredients, stir to combine completely and simmer until meat is tender, 35-45 minutes. If you prefer, transfer pork to crock-pot after deglazing. Add all other ingredients and cook on low for 8 hours. Serve with optional garnishes.
Notes: I especially like to get this started in the morning and transfer to the crock pot. When guest arrive, we can watch the game, nibble on snacks, and bring this out with minimal fuss. To round out the menu, serve this with crusty bread and a simple tossed salad.
