These pork ribs get a splash of amazing flavor from the pomegranate molasses that is used to coat them.
Rinse the ribs and pat dry.
In a small bowl, stir together the brown sugar, salt, cumin, oregano and mushrooms. Rub mixture onto ribs and place in a glass baking dish. Cover and refrigerate 4-6 hours. Remove ribs from refrigerator and allow to sit at room temperature for 1 hour.
Rub off salt mixture and place ribs on a baking sheet, meaty side up.
Heat oven to 250 degrees F. Stir together the pomegranate molasses, lime juice, chipotles, adobo sauce, honey, shallots and peanut oil. Spoon over ribs and bake for 4 hours.
