Pernil Pork Roast

A savory mix of seasonings is used to marinate a large pork roast which is then slow roasted until juicy and tender.
 

Ingredients

  • 4 tbsp salt
  • 1 tbsp pepper
  • 8 tbsp garlic powder
  • 1 tbsp minced garlic
  • 2 tbsp oregano
  • 4 tbsp olive oil
  • 1 tbsp distilled white vinegar
  • 1 packet Sazon Goya seasoning
  • 8 to 10 pound pork roast

Method

Combine all seasoning ingredients until it turns to a paste like consistency and set aside. Make penny size holes on both sides of roast. Stuff seasoning paste into holes (you may have to use your finger to fill holes). Cover roast with foil and let marinate overnight. Cook roast in oven on bottom rack for 6 hours at 250 degrees.

 

Notes: Check roast before 6 hours are up as all ovens do not cook the same.
