Sweet and juicy peaches compliment the salty and creamy prosciutto perfectly in this grilled sourdough sandwich. What a great summer dish.

2 Tbsp Olive Oil
4 slices Sourdough Bread
2 slices Swiss Cheese, cut ½" thick
2 Tbsp Goat Cheese
8 slices Fresh Peaches
4 Pieces Prosciutto


Preheat oil in a large skillet over medium heat. Place a slice of Swiss on one piece of bread and spread one tablespoon of goat cheese onto the other. Layer four slices of peach and 2 slices of prosciutto, then top with other slice of bread. Grill or pan fry until golden and cheese has melted, 4-5 minutes per side.
