Mint Lamb Meat Loaf

This lamb meat loaf gets spiciness from the Italian sausage, and extra flavor from fresh mint. Add a mint and garlic sauce to the top.
 

Ingredients

  • 2 lbs. lean ground lamb
  • 3 links hot italian sausage (removed from casings)
  • 4 large eggs, beaten lightly
  • 1 cup dry cracker crumbs (rosemary flavored crackers are best)
  • 1/2 cup finely chopped mint
  • 1 cup finely chopped green onion
  • salt & pepper to taste
  • Sauce:
  • 1/2 cup mint leaves
  • 1/2 cup green onion
  • 4 cloves garlic
  • 1 tbsp olive oil
  • 1 tbsp cider vinegar
  • Salt & Pepper to taste

Method

With extremely clean hands, mix together ground lamb, sausage, eggs, cracker crumbs, mint, green onion, and salt & pepper. Line two bread pans with aluminum foil, and form meat loaf into pans. Spoon sauce (below) over top. Bake uncovered at 425 degrees for 30 minutes and then turn oven down to 350 and bake 30 more minutes. To make sauce: put mint leaves, green onions and garlic in food processor. Chop finely until it becomes a puree. Add olive oil and vinegar gradually while chopping, and then season to taste.

 

Notes: The sauce can accept a complimentary vegetable as well, such as green beans.
