Le Bon Sandwich


Thin slices of ham, Port-Salut cheese and roasted red peppers are layered on a sliced baguette that's spread with an oil and vinegar mixture and heated in the oven.



Ingredients:

  • 1 long (about 24 inches) baguette
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon grainy Dijon-style mustard
  • 1 tablespoon red wine vinegar
  • 1 tablespoon chopped chives
  • 1/2 lb. very thinly sliced smoked ham
  • 1/2 lb. sliced Port Salut cheese
  • 1 jar roasted red peppers (about 4 peppers)
  • 1 head butter lettuce
  • Cornichons for garnish

Method

Preheat oven to 350 degrees. In small bowl, whisk together oil, mustard, vinegar and chives. Cut baguette in half lengthwise and spread cut halves with oil and vinegar mixture. Layer on ham, cheese and red peppers. Wrap sandwich in foil and place on cookie sheet. Bake in oven about 15 minutes, until heated through and cheese is softened. Remove from oven, open sandwich and add lettuce leaves. Cut sandwich crosswise into four sections and garnish with cornichons.

Notes: This hearty sandwich will serve four easily. It can be served with a salad. (I especially like to serve it with potato salad.)
