Latin Spiced Pork Tenderloin

Make this blend of spices to rub over pork tenderloin. Store the remaining spice mixture and use to rub on other meats.
Ingredients
- Spice mixture:
- 2 tablespoons cumin
- 2 tablespoons chili powder
- 1 tablespoon ground coriander
- 1 tablespoon salt
- 1 tablespoon ground pepper
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons packed brown sugar
- 1 1/2 teaspoons red pepper flakes
- 2 pork tenderloins (10-12 oz. each), trimmed
- Lime wedges, for garnish

Method
1. Heat grill. 2. Make spice mixture; makes 1/2 cup. 3. Rub 2 tablespoons spice mixture over each tenderloin. Grill over medium-low heat, 20 to 30 minutes, turning occasionally, until meat thermometer inserted in thickest part registers 160 degrees F. Serve with lime wedges, if desired.
Notes: Spice mixture will keep for about 6 weeks, covered and stored in a cool, dark place.
