This 5-ingredient recipe is simple but flavorful. The onions caramelize while the pork cooks.

- 1 cup extra-virgin olive oil
- 2 lb Loin of Pork
- Kosher salt
- 2 Large Vidalia Onions, cut into wedges
- 1 cup dry white wine

Method
In a Dutch oven, heat olive oil over medium-high heat. Coat pork evenly and generously with kosher salt. Not a thick coating, but an all-over coating. Place pork in hot oil, and seer on all sides, until meat is a rich golden brown. Lower the heat, and add the onions. Then add the white wine and cover. Simmer for approximately 1 hour, turning it when needed, and stirring the onions. When the onions have caramelized, your meat is cooked. Turn off the heat, and let sit for 15 minutes before cutting. Cut in thin slices and top with the onions, serve with Italian bread. You will be a star!
Notes: This also can be made the day before and reheated, or served cold at a picnic. You cam also use eye round roast beef instead of the pork loin. Either works great. You can serve with mashed potatoes and a vinaigrette salad for dinner at home.
