Italian Pork and Pasta Dinner

Pork chops are seasoned with rosemary and cooked with fresh mushrooms in a mixture of canned plum tomatoes and white wine.
Ingredients
- 3 Tablespoons olive oil
- 2 large cloves garlic, crushed
- 1/8 teaspoon black pepper
- pinch crushed red pepper
- 4 lean pork chops 1/2" thick
- 1/2 teaspoon crumbled dried rosemary 1/2 teaspoon salt
- 1 cup sliced fresh mushrooms
- 1-15 oz. can peeled plum tomatoes, chopped
- 1/2 cup dry white wine
- 1 tablespoon dried parsley flakes

Method
In a 12-inch skillet heat olive oil over low heat. Add garlic and cook slowly for 2 minutes. Push garlic to one side. Increase heat to medium, add pork chops sprinkle with rosemary, red pepper and black pepper. Brown on both sides for 4 minutes. Push pork to one side. Reduce heat to low, add mushrooms and saute for 2 minutes. Add tomatoes (with juice), white wine, salt and parsley. Cover and cook slowly for 10 minutes. Uncover and cook for 10 minutes longer. Serve over your favorite pasta.
