Holiday Ham

A maple syrup, apple juice and Dijon mustard glaze is the perfect finish for this special holiday main dish.
 

Ingredients

  • Ham:
  • 6-8 lb smoked ham shank with bone
  • 64 oz bottle apple juice
  • 1 cup molasses
  • 1 tablespoon whole cloves
  • 1 cinnamon stick
  • 3 cloves of garlic, smashed
  • Glaze:
  • 1/2 cup pure maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup apple juice
  • 1 tablespoon Dijon mustard
  • 1 dash ground cinnamon
  • 1 dash ginger
 
Method

Soak ham with bone, covered in water, in a large stockpot overnight, but do not refrigerate. Remove ham and rinse thoroughly, discard water, and place ham back in stockpot. Add apple juice, molasses and enough water to cover ham. Add cloves, cinnamon and garlic. Bring liquid to a boil then reduce heat to low it won't even bubble. Cook until bone on the large end slightly pulls away from meat, about 20 minutes per pound. Remove ham from liquid and place on a large tray to cool, about 15 minutes. Remove thick skin and some fat. Place ham on a preheated grill. Sear each side very quickly, just a few minutes per side. Remove from direct heat. Brush ham all over with glaze turning to cover ham completely. Close grill lid and cook with indirect heat about 10 minutes. Repeat process, allowing glaze to caramelize on ham. If grill does not have a lid, this can be done in an oven. Glaze: Combine glaze ingredients in a saucepan, bring to a boil, and boil about 2 minutes, being careful not boil over. Let cool a few minutes then lightly thicken before applying to ham.

 

Notes: This process takes awhile, but the results are well worth it.
