Hash Brown Quiche

A lovely breakfast or brunch dish with ham or bacon baked in a custard with a hash brown crust. Also has green pepper and cheddar cheese.
 

Ingredients

  • 3 cups frozen, loose shredded hash browns - thawed
  • 1/3 cup butter or margarine, melted
  • 1 cup diced, cooked ham; or one cup cooked bacon, torn into small pieces.
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced green pepper
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper

Method

Press hash browns between paper towels to remove excess moisture. press into bottom and up sides of un-greased 9 inch pie plate. Drizzle with butter. Bake at 425F for 25 minutes (this much can be done the night before). Combine the ham or bacon, cheese, and green pepper; spoon over crust. in a small bowl; beat eggs, milk, salt and pepper. Pour over all. Reduce heat to 250F, bake for 25-40 minutes or until a knife inserted near the center comes out clean. Allow to stand for 10 minutes before cutting.
