Ham Stuffed Potatoes

Baked potatoes make a quick and easy meal--just top with a mixture of ham, green pepper, onion, and pimento plus Swiss and American cheese.
Ingredients
- 4 large baking potatoes
- 2 cups ground fully cooked ham
- 1 cup mayonnaise or salad dressing
- 1/2 cup shredded Swiss cheese
- 2 tablespoons chopped green pepper
- 2 tablespoons chopped canned pimento
- 1 tablespoon instant minced onion
- 1/4 cup shredded American cheese

Method
Scrub potatoes and bake at 425 degreees until done, 45-60 minutes. Cool slightly then cut off top of each potato. Scoop out insides and cube. Toss with ham and next 5 ingredients then spoon back into potato shells. Bake at 425 degrees for 15 minutes, sprinkle cheese on top, and heat just until cheese melts, 1-2 minutes.
