Habanero, Guava-Basted Baby Back Ribs

Pork baby backs are simmered in beer, then grilled and brushed with a sauce made of guava jelly, honey, vinegar, molasses and habanero peppers.
 

Ingredients

  • Ribs:
  • 2 racks pork baby back ribs
  • Water in stock pot to cover ribs
  • 1 beer
  • 1 1/2 tablespoons ground allspice
  • 1 1/2 tablespoons granulated garlic
  • 2 tablespoons salt
  • Handful peppercorns
  • Sauce:
  • 3 medium onions, chopped
  • 3 roasted red peppers
  • 6 tablespoons (1/3 cup) olive oil
  • 2 1/2 cups guava jelly
  • 1/2 cup honey
  • 1 cup red wine vinegar
  • 1/3 cup molasses
  • 1-2 habanero peppers, seeded and chopped
  • 1 tablespoon salt, or to taste
  • 1 teaspoon pepper
  • 1 teaspoon allspice

Method

Simmer ribs and rib flavoring ingredients for one hour, or until meat starts to receed from bone ends. In a medium saucepan, saute onion and red pepper in oil for 3 minutes on medium-high heat. Stir in remaining ingredients; simmer over low heat for 40 minutes. Allow mixture to cool then puree in a food processor or use a stick blender. Preheat grill. Remove ribs from water and cut into individual ribs. Baste ribs with sauce and grill until caramelized.

 

Notes: Enjoy these ribs right off the grill with some cool cilantro cole slaw.
