Habanero, Guava-Basted Baby Back Ribs

Pork baby backs are simmered in beer, then grilled and brushed with a sauce made of guava jelly, honey, vinegar, molasses and habanero peppers.
Ingredients
- Ribs:
- 2 racks pork baby back ribs
- Water in stock pot to cover ribs
- 1 beer
- 1 1/2 tablespoons ground allspice
- 1 1/2 tablespoons granulated garlic
- 2 tablespoons salt
- Handful peppercorns
- Sauce:
- 3 medium onions, chopped
- 3 roasted red peppers
- 6 tablespoons (1/3 cup) olive oil
- 2 1/2 cups guava jelly
- 1/2 cup honey
- 1 cup red wine vinegar
- 1/3 cup molasses
- 1-2 habanero peppers, seeded and chopped
- 1 tablespoon salt, or to taste
- 1 teaspoon pepper
- 1 teaspoon allspice

Method
Simmer ribs and rib flavoring ingredients for one hour, or until meat starts to receed from bone ends. In a medium saucepan, saute onion and red pepper in oil for 3 minutes on medium-high heat. Stir in remaining ingredients; simmer over low heat for 40 minutes. Allow mixture to cool then puree in a food processor or use a stick blender. Preheat grill. Remove ribs from water and cut into individual ribs. Baste ribs with sauce and grill until caramelized.
Notes: Enjoy these ribs right off the grill with some cool cilantro cole slaw.
