Grilled Pork Skewers with Cilantro and Apple BBQ Sauce

Pork loin is cut into strips, threaded onto skewers, and brushed with a mixture of apple butter, barbecue sauce and oil. The writer serves the skewers on top of a salad dressed with a light vinaigrette and sprinkled with cilantro.
 

Ingredients

  • Skewers 6
  • Apple butter 1/3 cup
  • Hickory BBQ sauce 1/4 cup
  • Peanut Oil 1 tbsp.
  • Boneless Pork Loin 12 oz.
  • Salt pinch
  • Cracked pepper pinch
  • Cilantro, chopped 2 tsp.
 
Method

1. Soak the skewers in about 2 cups of cold water for 45 minutes. Mix to combine the apple butter, BBQ sauce and peanut oil. Set aside. 2. Preheat a gas grill to HIGH heat and oil generously. Butterfly pork loin if necessary to cut thin slices from the meat that measure about 4" long. Thread pork onto skewers. Season the pork skewers with the salt and pepper. Divide apple butter-BBQ sauce mixture in half. Brush the skewers with one portion of the apple butter-BBQ sauce mixture. Grill for 3-4 minutes, turning and basting with the remaining sauce often until pork is firm and cooked through. Brush sauce again over pork. Serve skewers over a salad dressed with light vinaigrette. Sprinkle skewers with the cilantro. Serve immediately.
