Grilled Garlic Cheese Foccacia with Prosciutto, Tomato & Pesto

Purchased foccacia are split and topped with prosciutto, provolone, tomato and pesto, then grilled in a grilling machine or in a skillet or griddle.
Ingredients
- 2, 9 oz. Foccacia Bread Rounds
- 2 Cloves Garlic, crushed
- 3 Tbsp. Unsalted Butter, softened
- 2 Tbsp. Pesto (purchased or homemade--recipe follows)
- 10 thin Slices Prosciutto Ham
- 20 thin Slices Provolone Cheese
- 2 Fresh Tomatoes, thinly sliced

Split each Foccacia bread in half. Mix butter and garlic together and spread evenly on the outside of each half of bread. Spread 1 1/2 Tbsp. of Pesto on the top inside of the bread. On the bottom inside of bread, layer 5 slices of cheese, 5 slices of Prosciutto, tomato slices, and 5 more slices of cheese. Place top half of bread on top. Repeat for second round of bread. Grill Sandwiches either in a Grilling Machine with a lid or in a frying pan or griddle. You need to press down on this sandwich, so if you are using the Grilling Machine, press the lid down to compress the Sandwich and let the flavors grill together and melt the cheese. If you are using a frying pan or griddle, press the sandwich down with a brick which is wrapped with aluminum foil. Turn the sandwich over midway through the grilling, so that both the top and bottom of the sandwiches are golden brown and the cheese is melted. * Pesto: 2 cups fresh basil leaves, packed 1/4 cup grated Parmesan cheese 1/2 cup Olive oil 3 tablespoons pine nuts or walnuts 3 garlic cloves, finely minced Combine all together in a food processor and blend until smooth.
Notes: Serve with a mixed green salad.
