Grilled Eggplant, Ham and Cheese Sandwich on Peasant Bread

Slices of broiled eggplant, Cheddar cheese, ham and tomato are placed between slices of whole grain bread and sprinkled with feta cheese before toasting.
Ingredients
- 1 medium eggplant
- 1/3 cup prepared pesto, divided
- 1/4 teaspoon salt, or to taste, divided
- 6 slices (sandwich-size) Cheddar cheese
- 12 slices multigrain or other peasant bread
- 6 slices ham
- 6 thin slices large tomato
- 4 ounces Feta cheese

Preheat broiler. Peel eggplant and cut crosswise into 6 slices, cutting slightly on the diagonal to make large slices. Discard end pieces. Arrange eggplant on baking sheet sprayed with Pam; brush tops with pesto. Sprinkle with salt. Broil until browned. Turn and brush second side with pesto. Broil until brown and tender. Toast slices of bread on one side. Place a slice of Cheddar, then a slice of eggplant on the toasted side of each of 6 slices bread. Top each eggplant slice with a slice of ham, then a slice of tomato sprinkled with salt, if desired. Crumble Feta over tomato. Cover with remaining 6 slices bread, toasted sides down. Brush tops of sandwiches with pesto; broil until golden brown. Turn sandwiches, brush with remaining pesto and toast second sides. Cut in half diagonally and serve immediately.
Notes: This hearty sandwich brimming with robust flavor makes an irresistible meal all by itself. The fragrant pesto compliments the mild eggplant, and the ham and cheeses balance both.
