Grandma's Minestrone Soup


This version of the Italian soup contains barley instead of pasta, plus sausage, baked beans, garbanzo beans, tomatoes, cabbage, carrots & celery.



Ingredients:

  • 2 lb. bulk Sausage
  • 44 oz. Baked Beans
  • 1 can Garbanzo Beans, drained and rinsed
  • 1 can Stewed Tomatoes
  • 1/2 cup finely chopped Onion
  • 1/2 cup Barley
  • 1 head Cabbage, shredded
  • 1/2 cup Celery, chopped
  • 1 cup Carrots, chopped

Method

Brown sausage in large Stock Pot. Add onions and brown for 2 minutes. Drain. Add tomatoes; simmer for 10 minutes. Add all the vegetables. Add 1 1/2 gallons of water; cook on medium heat for one hour. Add barley and baked beans and simmer for another hour.

Notes: Freezes very well.
